In the Kitchen:

Beer Bread

3 cups self-rising flour*
3 tablespoons granulated sugar
1 (12-ounce) can of beer
1. Preheat oven to 375°F (190°C). Lightly grease or spray a 9 x 5 x 3-inch loaf pan with nonstick cooking spray.
2. Combine all ingredients, mixing well.
3. Pour into prepared loaf pan and bake for 1 hour.
Makes 1 loaf.
*Or you may substitute with 3 cups all purpose flour, 3 teaspoons baking powder and 1 1/2 teaspoons salt.

Pineapple ham

1 bone in ham
1 small can frozen pineapple juice
12 whole cloves
Put ham in crock, top with frozen juice, and sprinkle with cloves.
Cook on Low 6-8 hours or on High 4 hours.

Lemon herb chicken for dinner:

4 chicken breasts- boneless if you wish
1 lemon sliced
Hand full of fresh thyme & Rosemary
2 cloves of garlic sliced.

Throw in crock, cook on high 4 hours.

Dried Apricot Pine Nut Pilaf Recipe
Submitted by wasunwilling

Makes 6 servings


Nutty, fruity side dish.

Ingredients
160 g onion, chopped (1 med)
2 tablespoon olive oil
1 cup brown rice, uncooked
1/2 teaspoon salt
1 3/4 cup chicken broth (14 oz can)
1/4 cup water
96 g dried apricots, diced (1/2 cup)
47 g pine nuts, toasted (1/3 cup)
1 tablespoon dried basil
1/2 teaspoon ground cumin
1 dash black pepper

Directions
1. Cook onion in olive oil over low heat.
2. Add rice, salt, broth and water.
3. Bring to a boil.
4. Cover, turn the heat down to simmer for 35 or 40 minutes for white rice, 50 minutes for brown rice (until rice is tender and liquid is absorbed).
5. Remove from heat.
6. Add apricots, cover and let stand for 5 minutes.
7. Stir in the pine nuts, basil and cumin. (Pine nuts can be toasted in a dry frying pan over medium heat.)
8. Pepper to taste and serve.

Episode 98: Field Report

Weigh in:

ON Recess

In the Kitchen:

Pumpkin Cranberry Bread
3 Cups all purpose flour
5 tsp. pumpkin pie spice
2 tsp. Baking Soda
1 1/2 tsp. Salt
3 Cups granulated sugar
1 (15 oz) can Libby's 100% pure pumpkin
4 eggs
1 cup vegetable oil
1/2 Cup Orange Juice
1 cup Fresh or frozen cranberries

Directions:
Preheat oven to 350 degrees
Grease and flur 2 9x5 loaf pans
Combine flour, pumpkin pie spice, baking soda and salt in large bowl.
Combine sugar, pumpkin, oil and OJ in large mixer bowl and beat until bleanded.
Add Pumpkin mixture to flour mixture, stir until moistened. Fold in cranberries.
Spoon batter into loaf pans.
Bake for 60-65 minutes or until toothpick comes out clean.
Cool on wire racks for ten minutes. Pop out of pans and allow to cool completely.

Place all in food processor.
Process until texture you want. Serve with chips.

In the Kitchen:

Baked Ziti
• 1 box Ziti or Rigatoni noodles
• 1 Can spaghetti sauce
• 1 Ricotta Cheese (16 oz)
• 1 pkg frozen spinach- thawed and drained
• 1 cup Mozzarella Cheese
• Parmesan cheese
Preparation:
Cook ziti according to directions. Put in 9" X 13" pan. Mix in Ricotta cheese and spinach. Mix in Mozzarella cheese. Pour sauce over top. Bake in 350° oven for 45 minutes. Sprinkle with Parmesan cheese, serve. Delicious!

In the Kitchen:

Scones

2 cups all purpose flour
2 tsp baking powder
1 tbl sugar
1/2 tsp salt
1/2 cup cold butter
2 lg eggs, beaten
1 cup whipping cream
confectioner's sugar

Preheat over to 425

Combine flour, baking powder, sugar and salt. Cut in butter until pea sized crumbs. Add 3/4 c. cream and eggs. Mix until dough forms. Pat out into a circle 1 inch thick. Cut as desired. Place on cooking sheet 1 inch apart. Brush with cream and bake for 10-15 minutes Sprinkle with powdered sugar while hot.

Chai

1 c. Water
1 sm. stick of cinnamon
6 cardamom pods
6 whole cloves
Ginger root ( I use a bit of dried ginger)
1/2 c. milk
4 tsp sugar
2 tsp loose Darjeeling tea

Bring first 5 ingredients to a boil, cover and simmer 10 minutes to release flavor.
Add milk and sugar, return to simmer stirring until sugar disolves. Remove from heat. Add tea leaves, steep for 3-5 minutes depending on how strong you like it. Strain and serve.
